It takes more than filling out a few forms for a brewery to become USDA-certified as all-organic. Just ask the head of Miramar’s only such-certified beer company, Protector Brewery. For the past eight years, his team has been brewing beers of all stripes using 100% organic ingredients, which are few and far between, not to mention far more expensive than standard hops and malt. Despite the hardships, the company has flourished behind quality beers like the pair the BFB crew cracks into in this segment: Organic SD West Coast Style IPA and Organic SD Hazy IPA.
